Roasted Pepper Cream Salmon

A simple salmon dinner with a rich roasted pepper cream sauce, fresh lemon, and just enough comfort to make it feel special.

There is something about a simple roasted pepper sauce that instantly makes a dish feel elevated. The natural sweetness from the peppers, combined with garlic, butter, and a touch of cream, creates a rich base that pairs perfectly with salmon.

Finished under the broiler with a squeeze of fresh lemon, this is the kind of meal that feels restaurant quality but comes together with minimal effort. It is easy enough for a weeknight dinner, but still feels special enough to serve when you have people over.

Ingredients

  • 3 mini bell peppers, red, yellow, and orange
  • 1/4 cup onion
  • 2 cloves garlic
  • 1 cup chicken stock
  • 2 tablespoons butter
  • Splash of heavy cream
  • Salt and pepper, to taste
  • Salmon fillets
  • Fresh lemon

Instructions

  1. Place the peppers, onion, and garlic under the broiler. Roast until softened with a little color and light charring.
  2. Transfer the roasted vegetables to a blender. Add the chicken stock and blend until semi smooth.
  3. Pour the mixture into a pan over medium heat. Add the butter and a splash of heavy cream.
  4. Let the sauce simmer until slightly thickened and silky. Season with salt and pepper to taste.
  5. Season the salmon with salt and pepper, then place it under the broiler.
  6. Cook until the salmon is just done and lightly golden on top.
  7. Spoon the roasted pepper cream sauce onto a plate, place the salmon over the top, and finish with a squeeze of fresh lemon.

Serve With

  • Steamed white rice
  • Roasted vegetables or broccolini
  • A simple green salad
  • Rice noodles or herbed rice

Tip: Do not rush the roasting step. That slight char on the peppers adds depth and gives the sauce its signature flavor.
