Karl’s Kitchen – Mexican Braised Short Rib


1 lb short ribs
3/4 cup Mexican beer
2-3 cups beef broth
¼ cup chipotle peppers in adobo
1 tbsp honey
2 tbsp tomato paste
1/2 lime
1 bunch cilantro
½ can fire roasted tomatoes
½ onion sliced

Short Rib Seasoning

1 tbsp smoked paprika
1 tbsp chili powder
1 tbsp garlic
1 tbsp onion powder
½ tbsp cumin
½ tbsp cinnamon
½ tbsp ground clove
Salt & pepper


    1. Start by gathering all your spices. Place the smoked paprika, chili powder, garlic powder, onion powder, cumin, cinnamon, ground clove, salt & pepper into a small small dish. Season short ribs liberally on all sides.
    2. In the meantime start by heating up your dutch oven. Once your pan is hot add oil to coat the bottom of the pan and sear short ribs for about 2-3 minutes on each side over medium-high heat.
    3. Once your short ribs are seared on all sides, add sliced onion, tomato paste, chipotle peppers with seeds removed, fire roasted tomatoes, beer, lime, cilantro, honey and beef broth into the pan.
    4. Stir until all the ingredients are incorporated, cover and leave on very low heat until the meat is fork tender. Approximately 4 hours. Shred meat with a fork, season with salt & pepper if needed and add to tacos, chilaquiles, salads, and so much more.
