Karl’s Kitchen – Tequila Lime Chicken Bowls


For the rice:
½ cup rice
1 cup chicken stock
1 Lime
Lime zest
¼ cup of cilantro

For the chicken:
1lb chicken thighs
¼ cup heavy cream
¼ cup tequila
1 bell pepper
½ onion
¼ cup of cilantro
1 lime
3 tbsp butter
1/2 cup frozen or fresh corn
1 avocado

Seasoning for chicken thighs (lightly season both sides)
Salt & pepper to taste
Cayenne pepper
Onion powder


  1. Start by making the rice, add chicken stock, lime juice, lime zest and ½ tsp of cumin into a pot and bring it to a boil before adding the rice. Cover rice and reduce heat to low until chicken stock is fully absorbed.
  2. Season the chicken accordingly by adding garlic, paprika, cumin, cayenne pepper, onion powder, salt, and pepper.
  3. Heat pan and add oil. Gently add your chicken thighs. Cook chicken thighs until brown on both sides and internal temperature has reached 165 degrees.
  4. Meanwhile in a separate pan, add oil to coat the bottom before adding the peppers, onions, and corn. Sauté until tender.
  5. Remove chicken thighs from pan and place on a cutting board.
  6. In the same pan you made the chicken add butter, tequila, cream, lime, garlic, and a splash of chicken stock. Let reduce, then add fresh cilantro, salt, and pepper.
  7. Slice chicken thighs and add chicken to sauce until coated.
  8. Serve immediately over rice and add the peppers, onion, corn, and sliced avocado.
