Karl’s Kitchen – Garlic and Herb Butter Basted NY Strip Steak
1 Prime NY Strip Steak
3 tbsp avocado oil or similar
3 tbsp butter
1 rosemary sprig
2 thyme sprig
2 garlic cloves
Salt & pepper to taste
- Remove your steak from the refrigerator and let it come up to room temperature, about 15 or 20 minutes. Season liberally with salt and pepper. In the meantime, turn your oven on to 500 degrees.
- Heat the pan up over high heat, add oil that has a higher smoke point (e.g., avocado oil, vegetable oil, etc.) and sear the steaks in a hot pan. Sear for 3 – 4 minutes on each side and then place into the oven.
- Remove the steak from the oven just before the steak reaches the desired doneness and place over the burner on medium high heat. Quickly add butter, garlic cloves, rosemary, and thyme. Baste the steak with the butter by tilting the pan and spooning the butter onto the steak repeatedly for a few minutes. Remove the steak from the pan and allow it to rest for about 5 – 10 minutes. Serve the extra butter on the side or slice the steak and drizzle over it.
- Serve immediately and enjoy!
