Tropical Pistachio Panko Crusted Mahi Mahi
Fresh, crisp, a little coastal, and just fancy enough to feel like you pulled off something special. This is one of those dinners that looks impressive, tastes bright and flavorful, and still comes together without making your kitchen feel like a full scale production.
It tastes like vacation, but it is weeknight friendly
The pistachios give it richness, the panko keeps it crisp, the citrus keeps everything lively, and the honey Dijon binder pulls it all together in a way that feels simple but smart. It is the kind of meal that lands right in that sweet spot between relaxed and elevated, which is exactly where I like dinner to be.
Ingredients
- 2 mahi mahi fillets, about 6 ounces each
- 1/4 cup roasted pistachios, finely chopped
- 1/4 cup panko breadcrumbs
- 1 teaspoon orange zest
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper, optional
- 1/2 teaspoon fresh thyme leaves
- 1 tablespoon unsweetened shredded coconut
- Salt and black pepper to taste
For the binder
- 1 tablespoon Dijon mustard
- 2 teaspoons honey
- 2 teaspoons olive oil
Optional drizzle
- Greek yogurt
- Fresh lime juice
- A little honey
- Pinch of salt
Karl’s Tip
Pat the fish dry before adding the glaze and press the crust on firmly. That one little step makes the topping bake up prettier, crisper, and more restaurant worthy. Also, do not skip a little fresh citrus at the end. It wakes everything up.
Serve it like a coastal dinner party
Plate it over coconut lime rice, add a mango avocado salad or roasted asparagus, and pour something cold and crisp. This is the kind of meal that deserves music on, candles lit, and a table that feels a little more put together than usual.
Simple steps, big payoff
- Preheat the oven
Set your oven to 400 degrees and line a baking sheet with parchment paper or lightly grease it. - Build the crust
In a bowl, mix together the chopped pistachios, panko, orange zest, smoked paprika, cayenne, thyme, coconut, salt, and black pepper. - Whisk the binder
In a small bowl, stir together the Dijon mustard, honey, and olive oil until smooth. - Prep the fish
Pat the mahi mahi dry, season lightly with salt and pepper, then brush the tops generously with the mustard honey mixture. - Press on the topping
Spoon the pistachio panko mixture over the fillets and press firmly so it really sticks. - Bake until golden
Place the fillets on the prepared baking sheet and bake for about 12 to 15 minutes, depending on thickness, until the fish flakes easily and the crust looks golden. - Finish and serve
If you are making the drizzle, whisk together Greek yogurt, lime juice, honey, and a pinch of salt. Spoon it over the fish just before serving.
