Karl’s Kitchen – Butter-Basted Wild Caught Seabass with Creamy Lemon Caper Sauce
Ingredients
- 1-2 pieces wild-caught seabass
- 2 tbsp olive or avocado oil
- 3 tbsp butter
- 2-3 tbsp heavy cream
- 3 tbsp white wine
- 1 clove garlic, minced
- 1 tbsp capers
- Juice of 1/2 lemon
- Salt and pepper, to taste
Instructions
Prepare the Fish:
Pat the seabass fillets dry with paper towels. Season both sides generously with salt and pepper.
Heat the Pan:
In a large skillet, heat the olive or avocado oil over medium-high heat until shimmering.
Sear the Fish:
Place the seabass fillets in the skillet. Cook for 3-4 minutes, or until golden brown. Carefully flip the fillets and cook for an additional 2-3 minutes on the other side.
Baste with Butter:
Reduce the heat to medium and add the butter to the skillet. As the butter melts, tilt the pan slightly and use a spoon to continuously baste the fish with the melted butter for about 1-2 minutes. This helps infuse the fish with rich flavor and keeps it moist.
Remove and Rest:
Transfer the cooked seabass to a plate and cover loosely with foil to keep warm.
Make the Sauce:
In the same skillet, reduce the heat to low and add the minced garlic. Sauté for 30 seconds until fragrant.
Stir in the white wine, scraping up any browned bits from the bottom of the pan. Let the wine simmer for 1-2 minutes to reduce slightly.
Add the heavy cream, capers, and lemon juice. Stir to combine and let the sauce simmer for another 2 minutes until slightly thickened. Taste and adjust seasoning with salt and pepper, if needed.
Serve:
Spoon the creamy lemon caper sauce over the seabass fillets. Serve immediately with your choice of sides, such as roasted vegetables or a light salad.
Tips:
- For best results, use fresh, high-quality seabass.
- Ensure the pan is hot before adding the fish to achieve a perfect sear.
- Do not overcrowd the skillet to maintain even cooking.
