Karl’s Kitchen – Springtime Salmon


(2) 4oz of salmon
2 tbsp butter
1/4 cup dry white wine
2 ears of corn
2 cloves garlic
1/4 of a red onion
4 basil leaves
1/2 cup sliced tomatoes
3 tbsp heavy cream
1 lemon
salt & pepper to taste


  1. Pat the salmon dry, rub it with olive oil, and then season it with salt and pepper.
  2. Heat up a cast iron pan or grill pan.
  3. In the meantime, start prepping the corn salsa by cutting the corn off the cob. You can also use frozen corn instead. Dice up the onion, garlic, tomatoes, and basil.
  4. Add your salmon to the hot pan and cook for about 4-5 minutes on each side.
  5. Heat up a sauté pan, add olive oil, and sauté the corn and onion for about 4 minutes. Then, add garlic, butter, and tomatoes. Sauté for another 3-4 minutes before adding the wine, cream, lemon juice, salt, and pepper to taste.
  6. Serve with rice or your favorite risotto, couscous, or whatever else comes to mind.
