Karl’s Kitchen – Creamy Tomato Soup


– 3-4 lbs tomatoes
– 1 cup broth (chicken or vegetable)
– 2 tbsp olive oil
– 2 tbsp butter (salted)
– 2 tbsp flour
– 3 tbsp balsamic vinegar
– Zest of 1 lemon
– 6 garlic cloves
– ½ cup fresh basil
– ½ cup grated Parmesan cheese
– 1 large shallot or sweet onion
– Salt & pepper to taste


  1. Start by preheating your oven to 450 degrees.
  2. Cut tomatoes in half and remove the stem. Dice up the onions and smash garlic cloves.
  3. Place tomatoes face up along with onion and garlic cloves onto a sheet tray. Drizzle with olive oil and season generously with salt and pepper.
  4. Roast tomatoes for about 30 minutes. In the final few minutes, I like to put them under the broiler to get a light char on them for extra flavor.
  5. Place roasted tomatoes, onions, and garlic into a blender or food processor. Blend until smooth.
  6. Meanwhile, in a pot, melt 2 tbsp of butter and add flour. Cook for a few minutes and then add the stock.
  7. Pour the tomato mixture into the pot and stir to combine. Add the cream, Parmesan cheese, balsamic vinegar, lemon zest, basil, and re-season with salt and pepper to taste.
  8. Allow the soup to come up to temperature on a low simmer.
  9. Serve with your favorite grilled cheese or garlic bread.
