Karl’s Kitchen – Balsamic Marinated Flank Steak With Chimichurri


1-2 lb skirt or flank steak


1 clove minced garlic
1/2 cup olive oil
1/4 cup balsamic
2 tbsp soy sauce
1 tbsp brown sugar
1 tbsp lemon juice


1/2 cup olive oil
2 tbsp red wine vinegar
1/2 cup chopped parsley
1/2 diced serrano (optional)
1 tsp oregano
Zest of one lemon
1/2 lemon juiced
3-4 cloves garlic minced
salt & pepper to taste
1 tbsp honey


  1. Place your garlic, olive oil, balsamic, soy sauce, brown sugar, and lemon juice into a bowl. Mix to combine.
  2. Pour marinade over flank steak and coat on all sides. Place in the refrigerator and marinate for at least 1 hour before cooking. I like to do a minimum of 3-4 hours for the most flavor.
  3. Start on the chimichurri by adding olive oil, red wine vinegar, chopped parsley, serrano, oregano, lemon zest, lemon juice, minced garlic, honey, and salt and pepper into a bowl. Mix to combine and add salt and pepper as needed. Once you have completed this, I like to let it sit for at least 20 minutes to let the flavors mingle.
  4. Grill flank steak, let it rest for a few minutes, and spoon over chimichurri. Enjoy!
