- Start by turning the broiler on high. Then, cut the tomatoes in half and place them on a roasting sheet. Drizzle with olive oil, add minced garlic, salt, and pepper. Place them in the broiler for about 3-5 minutes. The key is not to over-roast them to the point where they begin to lose their form. Remove from the oven and set aside.
- In a food processor, combine the ricotta, lemon zest, lemon juice, olive oil, thyme, basil, honey, salt, and pepper. Turn the food processor on and blend until smooth and creamy. Taste it and adjust the seasoning with extra salt and pepper if needed.
- Grill or bake the bread until it has a slight crunch to it. For best results, brush olive oil over the bread before placing it on the grill or in the oven.
- Spread whipped ricotta over the bread, then add the tomatoes. Sprinkle leftover herbs, olive oil, and salt. Cut and enjoy!
