Karl’s Kitchen – Mexican Rice


1 cup white rice
1 tbsp oil
2 cups chicken or vegetable stock
1 clove minced garlic
1/4 cup diced white onion
8 oz can tomato sauce
1 tsp ground cumin
1 handful of cilantro
1 lime
salt & pepper to taste


  1. Rinse the cup of rice under water to help prevent sticking.
  2. Put a small pot on the stove over medium heat and add oil. Then, add the diced onion, garlic, and rice. Toast the rice for about 10 minutes or until golden brown. Make sure you are constantly stirring to avoid it from burning.
  3. Add the chicken stock and tomato sauce, and stir to combine. Bring it to a boil, then reduce the heat to low and cook for about 20 minutes or until the water is completely absorbed.
  4. Stir in fresh lime, cilantro, cumin and season with salt and pepper to taste.
