Karl’s Kitchen – Calabrian Shrimp Scampi
Ingredients
Pasta (Fresh or store bought)
½ lb shrimp
2 cloves garlic
1 shallot
1 bunch of basil
½ cup cherry tomatoes
1 tsp Calabrian chilies
¼ cup white wine
2 tbsp butter
½ cup heavy cream
1 handful spinach
2 tbsp capers
1 lemon & zest
Instructions
- Begin by boiling water for your pasta. I prefer to make my pasta fresh, but store-bought pasta will work.
- Mince the garlic, chop your shallot, basil, and spinach, and cut the cherry tomatoes in half or quarters, depending on size.
- Heat a sauté pan over medium-high heat. Start by adding olive oil, garlic, and shallot and cook until fragrant, about 1-2 minutes.
- Add the shrimp to the pan and cook for 2-3 minutes before adding the tomatoes, spinach, and lemon zest.
- Next, add the white wine and let cook for about 1 minute before adding the juice of half a lemon, capers, and cream. Reduce for another 2-3 minutes before adding the cooked pasta to the pan. Toss to combine and serve with Parmesan cheese.
