Karl’s Kitchen – Mediterranean Couscous


1 cup Pearl Couscous
1/2 cup sliced cherry tomatoes
1/4 cup feta cheese crumbles
1/4 cup diced onion
Vinaigrette Ingredients
1/4 cup olive oil
2 tbsp red wine vinegar
1 tbsp honey
1 tbsp lemon juice
1 tsp minced garlic
1 tsp smoked paprika
1 tsp red pepper flakes
4 basil leaves chiffonade
salt & pepper to taste


  1. Follow directions on the package to cook couscous.
  2. While the couscous is cooking, start making the vinaigrette. Add the olive oil, red wine vinegar, honey, lemon, garlic, red pepper flakes, basil and salt and pepper to a bowl, mix to combine.
  3. In a separate bowl add the tomatoes, feta and onion. Pour in the cooked couscous and toss with the dressing. Once combined add any additional salt and pepper to taste.
