Karl’s Kitchen – Coffee Crusted Tri-Tip Sandwich


1lb Tri-Tip
1 tomato
1 French baguette
Handful of arugula
Crispy fried onions

Tri-Tip Seasoning
2 tbsp finely ground coffee
1 tbsp smoked paprika
2 tbsp salt
1 tsp black pepper
2 tbsp granulated garlic
1 tbsp brown sugar
¼ tsp cinnamon
¼ tsp ground cloves
¼ tsp ground cloves


½ cup mayonnaise
½ zest of lemon
3 tbsp lemon juice
1 tbsp capers
½ tsp smoked paprika
½ tsp garlic
Salt & Pepper to taste


  1. Season tri-tip with coffee seasoning the night before if time allows.
  2. Heat oven to 375 degrees. Meanwhile, sear tri-tip in a cast iron skillet on all sides and place in oven. Cook tri-tip to desired temperature. I prefer medium-rare at around 130-140 degrees internal temp.
  3. Remove tri-tip from once it hits desired temperature and let rest at least 10 minutes.
  4. While the tri-tip is resting make the Aioli. Combine all ingredients in a bowl.
  5. Cut French bread lengthwise down the middle and add aioli to both sides, thinly slice meat and layer it across the bread. Then add crispy onions, arugula, tomato, add the top of the bread, slice and enjoy!
